Vegetable Pastie with

Grilled Corn & Lime Avocado Salsa Salad

1 pkt Herbert Adams Gourmet Vegetable Pasties
3 cobs corn, peeled and silks removed
Light olive oil, for drizzling
½ punnet cherry tomatoes, halved
1 Lebanese cucumber ,chopped
1 avocado, chopped
Salt and freshly ground black pepper, to taste
Juice of 1 lime

Products used in this recipe:

1. Preheat oven to 180°C (350°F). Remove the pasties from pack and place on an oven tray. If frozen, heat for approximately 40 minutes. If thawed, heat for approximately 25 minutes.
2. Drizzle the corn with oil then chargrill or BBQ for 10-15 minutes, turning frequently until cooked. Allow to cool a little then slice the kernels off the cobs. 
3. In a bowl combine the corn with the tomatoes; cucumber and avocado, season to taste then drizzle with a little extra oil and the lime juice. Spoon onto dinner plates. Serve immediately with Vegetable Pasties.

 

Tip:

For a smart serving idea make a band of baking paper to wrap around the middle of the pastie and tie up with coloured string or twine
