¼ cup eggplant and tomato kasundi, or similar
¼ cup thick Greek style yoghurt
¼ cup mint leaves, for garnish
1. Preheat oven to 180°C (350°F). Remove the pies from pack and place on an oven tray. If frozen, heat for approximately 15 minutes. If thawed, heat for approximately 10 minutes.
2. Top each hot pie with a teaspoon each of the kasundi and yoghurt, then sprinkle with shredded or whole mint leaves. Serve immediately.
Kasundi is a spicy Indian style chutney usually made with eggplant and tomato. Any spicy chutney or relish may be used in its place
