1 pkt Herbert Adams Gourmet Creamy Chicken and Leek Pies
1 Lebanese cucumber, halved lengthwise, seeded and diagonally sliced
½ punnet baby Roma tomatoes, halved
1 small red onion, finely sliced
½ cup pitted Kalamata olives
50 g crumbled feta cheese
1-2 tablespoons chopped fresh oregano
1 tablespoon white vinegar
1 ½ tablespoons olive oil
1 clove garlic, crushed
Salt and freshly ground black pepper, to taste
Pinch of sugar
1. Preheat oven to 180°C (350°F). Remove the pies from pack and place on an oven tray. If frozen, heat for approximately 45 minutes. If thawed, heat for approximately 30 minutes.
2. In a bowl combine the cucumber, tomatoes, onion, olives, feta and oregano. Combine the vinegar, oil, garlic, seasonings and sugar in a jar. Shake well to make the dressing then toss through the salad.
3. Spoon the salad onto dinner plates. Serve immediately with Creamy Chicken and Leek Pies.
If fresh oregano is unavailable fresh mint makes an excellent substitute
